Best-Ever Traditional Mediterranean Shakshuka

Ingredients
  

Spiced Tomato & Pepper Sauce
  • 2 tbsp extra virgin olive oil
  • 1 medium yellow onion, finely diced
  • 1 large red bell pepper, seeded and diced
  • 4 cloves garlic, finely minced
  • 1 tsp ground cumin
  • 1 tsp smoked Spanish paprika
  • 1/2 tsp ground coriander
  • 1/4 tsp crushed red pepper flakes (optional for heat)
  • 1 can (28 oz) whole peeled San Marzano tomatoes (crushed by hand)
  • 1/2 tsp sea salt and freshly ground black pepper
Eggs & Garnishes
  • 5-6 large fresh pasture-raised eggs
  • 1/3 cup crumbled feta cheese
  • 2 tbsp fresh cilantro or parsley, chopped
  • 1 loaf crusty sourdough bread or warm pita for serving

Method
 

Cooking Instructions
  1. Heat olive oil in a large 10- or 12-inch heavy cast-iron skillet over medium heat.
  2. Add diced yellow onion and red bell pepper. Sauté for 6-8 minutes until tender and lightly caramelized.
  3. Add minced garlic, cumin, smoked paprika, coriander, red pepper flakes, salt, and black pepper. Cook for 1 minute until fragrant.
  4. Pour in hand-crushed canned tomatoes with their juices. Stir well, bring to a gentle simmer, reduce heat to medium-low, and simmer uncovered for 10-12 minutes until sauce is thick and rich.
  5. Use the back of a large spoon to create 5 to 6 small wells in the simmering tomato sauce. Crack one egg directly into each well.
  6. Cover skillet with a lid and cook on low heat for 5 to 8 minutes, until egg whites are set and opaque but yolks are still delightfully runny and golden. Remove from heat immediately, scatter crumbled feta and fresh cilantro on top, and serve right from the skillet with warm bread.
