Classic Golden Brioche French Toast

Ingredients
  

Spiced Custard & Bread
  • 8 thick slices (3/4-inch) fresh or day-old buttery brioche bread (or challah)
  • 4 large eggs
  • 3/4 cup whole milk
  • 1/4 cup heavy whipping cream (or half-and-half)
  • 2 tbsp granulated sugar or light brown sugar
  • 1.5 tsp pure vanilla extract
  • 1 tsp ground Ceylon cinnamon
  • 1/4 tsp freshly grated nutmeg
  • 1/4 tsp fine sea salt
Skillet Searing & Serving Garnishes
  • 3-4 tbsp unsalted European-style butter (divided for frying)
  • 1/2 cup pure grade-A amber maple syrup (warmed)
  • 1 cup fresh organic blueberries and raspberries
  • 2 tbsp powdered confectioners sugar (for dusting)

Method
 

Whisk the Custard
  1. In a wide, shallow dish or pie plate, whisk together the eggs, whole milk, heavy cream, sugar, pure vanilla extract, ground cinnamon, nutmeg, and sea salt until completely smooth and emulsified.
Dip & Soak Brioche Slices
  1. Preheat a large non-stick griddle or heavy cast-iron skillet over medium heat (around 350°F / 175°C). Melt 1-2 tablespoons of butter across the surface.
  2. Dip each thick slice of brioche bread into the custard mixture, allowing it to soak for 15-20 seconds per side so the bread absorbs the liquid into its center without becoming overly soggy.
Griddle to Caramelized Perfection & Serve
  1. Place the soaked brioche slices onto the hot, buttered griddle. Cook undisturbed for 3 to 4 minutes until the bottom develops a deep, golden-brown caramelized crust.
  2. Flip with a spatula and cook the other side for 3 to 4 minutes until golden and the custardy center is cooked through and puffed slightly.
  3. Transfer to warm plates. Stack high, top with a melting pat of butter, dust generously with powdered sugar, scatter fresh berries, and drizzle with warm pure maple syrup. Serve immediately.
