Ingredients
  

Meat & Aromatics
  • 1.5 lbs lean ground beef (85/15 or 90/10)
  • 1 medium yellow onion, finely diced
  • 1/2 medium green bell pepper, finely diced
  • 3 cloves garlic, minced
  • 1 tbsp olive oil (if using extra-lean beef)
Saucy Sloppy Joe Glaze
  • 3/4 cup tomato sauce (or organic ketchup)
  • 2 tbsp tomato paste
  • 2 tbsp brown sugar (or pure maple syrup)
  • 1.5 tbsp Worcestershire sauce
  • 1 tbsp yellow or Dijon mustard
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp fine sea salt and black pepper to taste
  • 1/4 cup water or low-sodium beef broth
To Serve
  • 6 buns brioche or potato burger buns, buttered and lightly toasted
  • 6 slices sharp cheddar cheese (optional)
  • 1/4 cup dill pickle slices (optional)

Method
 

Brown the Beef & Sauté Veggies
  1. Heat a large skillet or cast iron pan over medium-high heat. Add ground beef, diced onion, and diced green bell pepper. Cook for 6–8 minutes, breaking up the beef into small crumbles with a wooden spoon, until meat is browned and vegetables are tender. Drain any excess fat if needed.
  2. Add minced garlic and cook for 1 additional minute until fragrant.
Simmer the Homemade Sauce
  1. Stir in tomato sauce, tomato paste, brown sugar, Worcestershire sauce, mustard, smoked paprika, chili powder, sea salt, black pepper, and beef broth.
  2. Reduce heat to medium-low and simmer uncovered for 8 to 10 minutes, stirring occasionally, until the sauce thickens and coats the meat in a rich, glossy glaze.
Toast & Assemble
  1. Lightly butter the cut sides of your brioche buns and toast them in a hot skillet until golden brown.
  2. Spoon generous scoops of the hot Sloppy Joe filling onto the bottom buns, top with cheese or pickles if desired, cap with top buns, and serve immediately.
