Cozy Apple Pie Baked Oatmeal

Ingredients
  

Dry Oat & Spice Base
  • 2 cups certified gluten-free old fashioned rolled oats
  • 1.5 tsp ground Ceylon cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp baking powder
  • 1/2 tsp fine sea salt
  • 1/2 cup raw pecans or walnuts, roughly chopped
Wet Ingredients & Fresh Apples
  • 2 cups unsweetened almond milk (or oat milk)
  • 1/3 cup pure maple syrup
  • 2 large eggs (or 2 flax eggs for vegan)
  • 3 tbsp melted coconut oil or unsalted butter
  • 1.5 tsp pure vanilla extract
  • 2 medium Honeycrisp or Gala apples, peeled and diced into 1/2-inch cubes (divided)

Method
 

Preheat & Combine Dry Ingredients
  1. Preheat oven to 375°F (190°C). Lightly grease an 8x8-inch or 2-quart oval ceramic baking dish with coconut oil. In a large mixing bowl, whisk together rolled oats, cinnamon, nutmeg, baking powder, sea salt, and half of the chopped pecans.
Whisk Liquids & Fold Apples
  1. In a separate medium bowl, whisk together almond milk, pure maple syrup, eggs, melted coconut oil, and vanilla extract until smooth.
  2. Layer half of the diced apples across the bottom of the prepared baking dish. Spread the dry oat mixture evenly on top. Pour the wet milk mixture evenly over the oats, gently shaking the dish to ensure liquid saturates all oats.
Top, Bake & Serve
  1. Scatter the remaining diced apples and the rest of the chopped pecans across the top. Drizzle lightly with 1 extra tablespoon of maple syrup if desired.
  2. Bake uncovered for 35 to 40 minutes until the top is deeply golden brown, fragrant, and the center is set. Cool for 10 minutes before slicing into warm squares. Serve warm with Greek yogurt, extra maple syrup, and a splash of milk.
