Cranberry Pecan Brie Bites (Puff Pastry)

Ingredients
  

Pastry & Cheese Filling
  • 1 sheet ready-rolled puff pastry (thawed)
  • 8 oz wheel of French Brie cheese, cut into 24 bite-sized cubes (rind left on)
  • 3/4 cup whole berry cranberry sauce (homemade or canned)
  • 1/3 cup pecans, finely chopped and toasted
  • 2 tbsp fresh rosemary sprigs, finely chopped
  • 2 tbsp pure honey or maple syrup for drizzling

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C). Spray a 24-count mini muffin pan generously with non-stick cooking spray.
  2. Unroll the thawed sheet of puff pastry on a lightly floured surface. Use a pizza cutter or sharp knife to cut the pastry into 24 uniform squares.
  3. Gently press each pastry square into a muffin cup, allowing the 4 corners to point upwards.
  4. Place one cube of brie cheese into each pastry cup. Spoon about 1 teaspoon of cranberry sauce directly over the brie.
  5. Sprinkle chopped pecans and a pinch of fresh rosemary over each bite.
  6. Bake in preheated oven for 13 to 15 minutes until the pastry edges are puffed and golden brown, and the brie is gloriously melted. Remove from oven, let rest in the pan for 5 minutes, drizzle lightly with honey, and serve warm!
