Creamy Tomato Basil Tortellini Soup

Ingredients
  

Aromatic Veggie & Tomato Soup Base
  • 2 tbsp extra virgin olive oil (or sun-dried tomato oil)
  • 1 medium yellow onion, finely diced
  • 2 medium carrots, peeled and finely diced
  • 2 stalks celery, finely diced
  • 4 cloves garlic, minced
  • 1 can (28 oz) crushed San Marzano tomatoes
  • 1/3 cup sun-dried tomatoes in oil, finely chopped
  • 4 cups low-sodium vegetable or chicken broth
  • 1 tsp dried Italian herbs (oregano, thyme, basil)
  • 1/4 tsp crushed red pepper flakes
Tortellini, Cream & Italian Cheeses
  • 16-20 oz refrigerated fresh three-cheese tortellini
  • 3/4 cup heavy whipping cream (or full-fat coconut milk)
  • 1/2 cup freshly grated aged Parmesan cheese
  • 1 cup shredded mozzarella cheese (for melting on top)
  • 1/2 cup fresh sweet basil leaves, roughly chopped
  • 1/2 tsp kosher salt and freshly cracked black pepper

Method
 

Sauté Aromatics & Build Soup Base
  1. Heat olive oil in a large heavy Dutch oven or soup pot over medium heat. Add diced onions, carrots, and celery (mirepoix); sauté for 6 to 8 minutes until vegetables are tender and fragrant. Add minced garlic, Italian herbs, and red pepper flakes; cook for 1 minute.
Simmer the Rich Tomato Broth
  1. Pour in the crushed San Marzano tomatoes, chopped sun-dried tomatoes, and vegetable broth. Season with kosher salt and black pepper. Bring to a boil over medium-high heat, then reduce heat to low and simmer uncovered for 8 to 10 minutes to allow the rich flavors to meld together.
Cook Tortellini, Add Cream & Serve
  1. Stir in the fresh three-cheese tortellini. Simmer gently for 3 to 5 minutes until the pasta floats to the top and is tender al dente (be careful not to overcook).
  2. Reduce heat to lowest setting. Pour in the heavy cream, grated Parmesan cheese, and fresh chopped basil. Stir until the cream is fully blended and cheese is melted into a velvety broth.
  3. Ladle hot soup into deep bowls. Top each serving with shredded mozzarella, extra shaved Parmesan, fresh basil leaves, and cracked black pepper. Serve immediately with warm crusty garlic bread.
