Crispy Bacon-Wrapped Stuffed Dates

Crispy bacon-wrapped dates stuffed with creamy goat cheese and crunchy almonds, baked until golden and drizzled with warm honey. The ultimate holiday party appetizer!

Ingredients
  

Stuffed Dates & Wrap
  • 20 large Medjool dates, pitted (make a lengthwise slit in each)
  • 4 oz creamy goat cheese (chèvre) or cream cheese
  • 20 whole roasted salted almonds or pecan halves
  • 10 strips high-quality beef bacon (or turkey bacon), sliced in half crosswise
  • 2 tbsp pure honey or hot honey for drizzling
  • 1 tbsp fresh rosemary, finely chopped

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (205°C). Line a rimmed baking sheet with aluminum foil and place a wire cooling rack on top (elevating the dates allows bacon grease to drain so they bake ultra crisp on all sides).
  2. Make a gentle lengthwise slit down one side of each Medjool date and remove the pit.
  3. Spoon about 1 teaspoon of creamy goat cheese into the center cavity of each date, then press one whole roasted almond directly into the cheese.
  4. Wrap each stuffed date snugly with a half strip of bacon. Secure tightly through the center with a wooden toothpick.
  5. Place wrapped dates seam-side down on the wire rack over the baking sheet.
  6. Bake in the preheated oven for 18 to 22 minutes, flipping once at 10 minutes, until the bacon is deep golden brown and crispy. Transfer to a serving platter, drizzle with warm hot honey, garnish with chopped rosemary, and serve warm!
