Crispy Belgian Protein Waffles

Ingredients
  

High-Protein Blender Batter
  • 1 cup creamy whole milk cottage cheese (e.g. Good Culture)
  • 1 cup old-fashioned rolled oats (gluten-free if needed)
  • 2 large eggs
  • 1 scoop (30g) vanilla whey protein powder or whey/casein blend
  • 1/4 cup unsweetened almond milk (or regular milk)
  • 1 tsp baking powder
  • 1 tsp pure vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp fine sea salt
  • 1 tbsp melted butter or coconut oil (plus extra to grease iron)
Toppings & Serving
  • 1/2 cup plain Greek yogurt or whipped cottage cheese
  • 1/2 cup fresh organic sliced strawberries and blueberries
  • 2 tbsp pure maple syrup or raw honey

Method
 

Blend the Batter
  1. Add cottage cheese, rolled oats, eggs, vanilla protein powder, almond milk, baking powder, vanilla extract, cinnamon, sea salt, and melted butter into a high-speed blender. Blend on high for 45 to 60 seconds until completely smooth and thick with no visible oat or curd pieces.
Preheat & Cook in Waffle Iron
  1. Preheat your Belgian waffle iron to medium-high heat. Lightly brush or spray the iron plates with oil or butter.
  2. Pour about 1/2 to 2/3 cup of batter into the center of the preheated waffle iron, spreading slightly toward the edges. Close the lid and cook for 4 to 5 minutes until steam stops billowing and the waffle is deep golden-brown and crispy.
Garnish & Serve
  1. Carefully remove the hot waffle with a silicone fork. For maximum crispiness, let rest on a wire cooling rack for 1 minute before plating.
  2. Stack waffles high, dollop with Greek yogurt, arrange fresh berries, and drizzle generously with warm pure maple syrup. Serve immediately.
