  • 2 cups all-purpose flour
  • 1/4 cup cornstarch (the secret for ultra-crispy edges)
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp fine sea salt
Wet Ingredients & Toppings
  • 1 3/4 cups cultured buttermilk, room temperature
  • 2 large eggs, yolks and whites separated
  • 1/3 cup unsalted butter, melted and cooled
  • 1 tsp pure vanilla extract
  • 1 cup fresh strawberries or berries for topping
  • 1/2 cup warm pure maple syrup and whipped cream for serving

Cooking Instructions
  1. Preheat your waffle iron to medium-high heat. Set a wire rack inside a baking sheet in a 200°F (95°C) warm oven to keep finished waffles crispy.
  2. In a large mixing bowl, whisk together all-purpose flour, cornstarch, sugar, baking powder, baking soda, and fine sea salt until well combined.
  3. In a separate medium bowl, whisk cultured buttermilk, egg yolks, melted butter, and pure vanilla extract.
  4. In a clean glass bowl, beat the egg whites with a hand mixer or whisk until soft peaks form (this creates the airy cloud-like interior).
  5. Pour the buttermilk mixture into the dry ingredients and stir gently with a rubber spatula until just combined (a few small lumps are okay). Gently fold in the whipped egg whites.
  6. Lightly brush or spray waffle iron with oil. Pour about 1/2 to 2/3 cup batter into the center. Close lid and cook for 4 to 5 minutes until steam stops and waffle is deep golden brown and crisp. Serve immediately with fresh strawberries, butter, and warm maple syrup.
