Crispy Homemade Sourdough Pizza Crust

Ingredients
  

  • 100 g (approx 0.5 cup) Active bubbly sourdough starter (100% hydration)
  • 240 g (1 cup) Warm water (85°F / 29°C)
  • 360 g (3 cups) Unbleached bread flour (or Tipo 00 flour)
  • 15 g (1 tbsp) Extra virgin olive oil
  • 8 g (1.5 tsp) Fine sea salt
  • 2 tbsp Semolina flour (for dusting pizza peel)
  • 0.75 cup San Marzano crushed tomatoes
  • 8 oz Fresh mozzarella cheese (drained and torn)
  • 1 handful Fresh basil leaves and extra olive oil (for garnish)

Method
 

  1. In a large bowl, whisk active sourdough starter and warm water. Add bread flour and stir into a shaggy dough. Cover and rest (autolyse) for 30 minutes.
  2. Add sea salt and olive oil. Perform 3 sets of stretch-and-folds every 30 minutes. Let dough bulk ferment at warm room temp for 4 to 6 hours until doubled.
  3. Divide dough into 2 equal balls. Shape into tight rounds, cover, and let rest for 1 hour (or refrigerate up to 72 hours).
  4. Preheat oven with a pizza stone on top rack to 500-550°F (260-290°C) for 45 minutes.
  5. Dust peel with semolina, stretch dough by hand into a 12-inch round leaving a puffy rim. Top with crushed tomatoes and mozzarella. Bake on stone for 7-9 minutes until blistered and charred!
