- Season chicken breasts evenly on both sides with garlic powder, oregano, smoked paprika, salt, and black pepper.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat and sear the chicken for 2-3 minutes per side until golden (optional step for enhanced flavor, or place directly into slow cooker).
- Arrange the chicken breasts in the bottom of your slow cooker in a single layer.
- In a medium bowl, whisk together heavy cream, chicken broth, minced garlic, drained julienned sun-dried tomatoes, and grated Parmesan cheese. Pour the sauce mixture evenly over the chicken.
- Cover and cook on LOW for 4 to 5 hours (or on HIGH for 2 to 2.5 hours) until chicken reaches an internal temperature of 165°F (74°C) and is ultra tender.
- Stir in cornstarch slurry during the last 20 minutes if a thicker sauce is desired. Spoon velvety sauce generously over chicken, garnish with fresh chopped basil and extra Parmesan, and serve warm over pasta or mashed potatoes.
