Baking Method
- Preheat your oven to 375°F (190°C). Line a 12-cup standard muffin tin with paper liners or grease with oil spray.
- In a large mixing bowl, whisk eggs, oil, brown sugar, white sugar, and vanilla extract together until smooth and emulsified.
- Fold in the freshly grated zucchini until well distributed throughout the liquid mixture (do not squeeze moisture out!).
- Add the all-purpose flour, ground cinnamon, nutmeg, baking powder, baking soda, and fine sea salt. Gently fold with a rubber spatula just until flour streaks vanish.
- Fold in walnuts or chocolate chips if desired. Divide batter evenly into 12 muffin wells, filling each about 3/4 full.
- Bake at 375°F for 18 to 20 minutes until golden brown, springy to the touch, and a toothpick inserted in the center emerges clean.
- Cool for 5 minutes in the tin, then transfer muffins to a wire rack to cool completely. Serve warm with softened butter.
