- Preheat your oven to 400°F (205°C) and line a large heavy-duty baking sheet with parchment paper or foil.
- In a small saucepan, whisk soy sauce, honey, rice vinegar, toasted sesame oil, minced garlic, and grated ginger. Simmer over medium heat for 3 minutes. Stir in the cornstarch slurry and whisk constantly for 1-2 minutes until thickened and glossy. Remove from heat.
- Place diced chicken breasts and broccoli florets on the prepared baking sheet. Drizzle with avocado oil, a pinch of salt and pepper, and toss to coat lightly.
- Pour 2/3 of the warm teriyaki glaze evenly over the chicken and broccoli, tossing until every piece is well coated. Spread into a single, flat layer with space between pieces.
- Roast in the preheated oven for 12-15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and broccoli edges are lightly charred and tender-crisp.
- Drizzle with remaining warm glaze, scatter toasted sesame seeds and fresh sliced scallions over top, and serve hot over jasmine rice.
