Traditional Fall Harvest Salad Bowl

Ingredients
  

Roasted Squash Base
  • 3 cups butternut squash, peeled and cut into 3/4-inch cubes
  • 1.5 tbsp extra virgin olive oil
  • 1/2 tsp fine sea salt
  • 1/4 tsp ground cinnamon or nutmeg
Salad Greens & Toppings
  • 6 cups mixed baby greens (baby spinach, arugula, and tender kale)
  • 1 large Honeycrisp or Gala apple, thinly sliced
  • 1/2 cup toasted pecan halves (or walnuts)
  • 1/3 cup dried cranberries or pomegranate arils
  • 4 oz creamy goat cheese (chevre), crumbled (or feta)
  • 2 tbsp roasted pumpkin seeds (pepitas)
Maple Dijon Vinaigrette
  • 1/3 cup extra virgin olive oil
  • 2 tbsp pure maple syrup
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 clove garlic, finely minced
  • 1/4 tsp sea salt and freshly ground black pepper to taste

Method
 

Roast the Butternut Squash
  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper. Toss cubed butternut squash with olive oil, salt, and cinnamon. Spread in an even layer and roast for 22–25 minutes, flipping halfway through, until tender and caramelized on the edges. Let cool slightly.
Whisk the Dressing
  1. In a mason jar or small glass bowl, combine extra virgin olive oil, pure maple syrup, apple cider vinegar, Dijon mustard, minced garlic, sea salt, and black pepper. Shake or whisk vigorously until smooth and emulsified.
Assemble & Toss
  1. In a wide salad bowl, layer fresh baby greens, warm roasted squash cubes, crisp sliced apples, dried cranberries, and toasted pecans.
  2. Drizzle with half of the maple Dijon vinaigrette and gently toss. Top with crumbled goat cheese and crunchy pumpkin seeds. Drizzle remaining dressing over top and serve immediately.
